Default Finally! Buttercream!

I finally made buttercream!!!! I have tried so many recipes, got so frustrated and finally I found the recipe that works for me. It's the WBH House Buttercream recipe!

I bought some shortening today and decided to give buttercream one last try. The WBH and Buttercream Dream were the two I wanted to try. I started with WBH and it was soooo good.

I just have to share this with you 'cause i know you guys will understand it more than anyone will. So there i was mixing the shortening and butter with the sugar and all the other stuff. I think I got distracted for a second and reached out for something I totally have forgotten what it was. But I took my eyes off the mixing bowl for a second, just a second. And when i looked again.... BUTTERCREAM!!!!! I could've jumped up and down, danced for joy and all that jazz but I had to keep mixing and I'm using a hand mixer.

Anyway, it was like watching a scientific experiment go very well. I watched it go fluffy and creamy and silky and white. It was so perfect! I piped with it! I think I should check out how to make buttercream roses because I tried making some earlier tonight.

I definitely LOVE this recipe. I love the way it looks and feels and pipes. It's not as sweet though, which is what I was looking for BUT i think I'm gonna add a cup of PS next time I make it just to sweeten it a little more. Also I don't know if anyone has tried using coffee creamer with this? I would liketry it, maybe dissolve the creamer with the boiling water first. The flavor is lacking BUT it's tweakable. And I blame my vanilla. Next time I'm gonna use a better one.

Would you share the recipe or the link to it?? I have yet to find a buttercream that I like so I have been buying Sam's Club Buttercream which is ok but I would like to have a good recipe. Thanks

Whimsical Bake House Buttercream
In Mixer bowl, stir together:

6 Cups Confectioners' Sugar
1/8 teaspoon salt
1 teaspoon Vanilla Extract

Using whip attachment, add and whip on low speed:

1 cup boiling water (3/4 cup on hot days)

Whip until smooth and is cool.

Add and whip until smooth again:

2 3/4 cup Hi-Ratio* or regular vegetable shortening
6 ounces (1 1/2 sticks) butter; slightly chilled and cut into 1" pieces

Turn up mixer to medium-high. Whip until double in volume and is light and fluffy. About 10-20 minutes. Recipe will almost fill a 5-quart mixer bowl when done.

Makes 9 1/2 cups


For chocolate Buttercream exchange 1 cup of icing sugar for powdered Cocoa.

Thanks for the Recipe!! I will give it a try. Does it leave a film in your mouth from the shortening that is what I hate about making my own. Do you recomend the high ratio shortening? I have not used it yet.

first of all, this does not crust. I used the hot spatula method to smooth it.

second, i just used the regular shortening i have available here. It's not crisco, just a local brand. I used the same shortening as my previous buttercream fiascos. i did not taste the shortening at all or have that filmy sense in my mouth. Although it really depends on you. I made an all-shortening buttercream once before and i didn't have it either, maybe i have high tolerance for it.

i'd love to know how it turns out for you so update me okay?

high ratio totally eliminates any film in your mouth feel.
