Non-dairy whipped icing recipe?
My neice is allergic to dairy, and so we are looking for a whipped icing recipe that doesnt use any milk. For her birthday cake, her mom is making a stack of pancakes, and icing it with the whipped icing and decorating it with fresh strawberries. Something like whipped cream. Does anyone know of something that would work??

could you use cool whip or non dairy topping flavored with vanilla maybe? you could even add a bit of whipped cream stabilizer or a bit of cornstarch to it as it is re-whipped for more stability.

I had thought of cool-whip, but she wanted an icing, like a buttercream. She might just end up needing to use cool-whip if we cant find anything else! I do hope we can--my neice is soooo cute. She'd love this "cake."

Thanks, I sent her those. And this one that I found.
Whipped Buttercream Icing Ingredients:
1/2 cup Cold water
2 cups Crisco
1 tablespoon Meringue powder
1 lb Powdered sugar
3/4 cup granulated sugar
1/2 teaspoon Butter flavor (or vanilla/other)
Instructions:
In grease free bowl, put 1/2 cup cold water and 1 tablespoon meringue powder. Beat until very stiff. Add 3/4 cup granulated sugar, slowly. Beat until glossy. Set aside.
In another bowl beat 1 1/2 or 2 cups Crisco, 1 pound powdered sugar and 1/2 teaspoons butter flavor. Beat well. Gradually add meringue mixture into buttercream mixture. Beat until fluffy.

that's just a simple butter cream all crisco version, so really you could use any all shortening recipe as long as you dont add any dairy.
So you could use sugar shacks recipe since it's made with non dairy creamers and any liquid really.

7 Minute Frosting
Serves/Yields: 3 cups
Prep. Time: 10 mins
Cook Time: 3 minutes
Category: Frostings
Difficulty: Easy
Introduction
This is a very fluffy merangue icing. I love to use it on lemon cake (sort of a take on lemon merangue pie!) It's quite stable and can be piped for borders etc as well.
Ingredients
2 egg whites
3/4 cup white sugar
1/3 cup Lily white corn syrup
2 tbsp water
1/4 tsp cream of tartar
1/4 tsp salt
1 tbsp vinegar
1 tsp clear vanilla
Directions
Bring a pot of water to boil on top of the stove. Combine all ingredients together in a metal bowl. Place bowl over pot of boiling water (like a double boiler). With a wisk or hand mixer beat the mixture for 3 minutes until it starts to get foamy and all the sugar is dissolved. Mixture should be quite warm. Remove mixure from heat and then beat frosting with a mixer for approximately 3-4 minutes until stiff peaks form. Frost cake immediately.

Here is one I have used.... I hate the all shortning but if you have to have non dairy this recipe tastes really good as long as you don't think about what you are eating!!!
1 cup Crisco
2 tsp Clear Vanilla
1 tsp Almond extract
1 tsp Butter flavoring
3 to 4 cups powdered sugar
Mix the crisco and flavorings until they are blended well. Add the powdered sugar slowly until you have it to the right consistancy. I always use the 4 cups powdered sugar and add a few tbsp milk to soften it up. But if you need non dairy just add less sugar.
