The shoebox bakery coconut cake.
ingredients

2 3/4 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
1 cup canned sweetened cream of coconut (such as Coco Lpez)*
4 large eggs, separated
1 teaspoon vanilla extract
1 cup buttermilk

Pinch of salt

Cream Cheese Frosting

peanut butter balls/buck eyes

I make Peanut Butter Balls with

1 box Graham Cracker Crumbs
1 box Powdered Sugar
2 sticks softened butter
2 cups peanut butter (your choice but I use smooth)

Mix all together, roll into balls and dip into chocolate.

loft house cookie recipe

2/3 C Shortening
3/4 C Sugar
1 egg
1/2 Tsp Vanilla
1/2 Tsp Orange Zest
1 1/2 C Flour
1/4 Tsp Salt
1 1/2 Tsp Baking Powder
4 T Milk

Beat shortening, sugar, eggs and vanilla till fluffy. Combine dry ingredients and add to shortening mix alternating with the milk. Add orange zest. Drop by spoonfuls onto greased cookie sheet. Bake at 350 for 12-15 minutes. Makes 2 dozen.

Butter milk yellow cake and variations of it.

Buttermilk yellow cake

1 cup butter
2 cups sugar

4 eggs, separated

3 cups flour (AP flour but can substitute equal weight of pastry flour)
1 tsp baking soda
1 tsp cream of tartar

1 cup buttermilk
1.5 tsp vanilla

Cream butter and sugar until light. Add egg yolks, one at a time until well incorporated. Sift dry ingredients. Add alternately with buttermilk/vanilla, starting and ending with dry. Mix only until smooth....
