Thanks, Amanda. You think like I do, but I just didn't know if I was out of the norm. This is how I would normally handle a "walk-in" bride. But The Hilton is a different story. They are thinking that if the bride wants to keep the top tier and she needs a cake to serve 100 ppl, then I should just be charging them for 100 ppl. And that's okay by me just to have that guaranteed business, I'll give them the top tier, but I don't want to lose those servings plus the additional servings just because I can't shape a cake to serve exactly 100 ppl. kwim? Sometimes we may be talking the difference of $50 or more!

Just wanted to see how everyone else was charging brides.
