Caramel Corn
5 qts popped corn
1 cup butter
2 cups brown sugar, packed
1/2 cup light corn syrup
1 tsp salt
1 tsp vanilla
1/2 tsp baking soda
Peanuts (optional)
Put popcorn in 250 degree oven in large pan. Combine butter, sugar, corn syrup, and salt in a 2 qt pan. Place on medium heat, stirring till sugar dissolved. Continue to boil to firm ball stage (248 degrees, about 5 minutes). Remove from heat and stir in vanilla and baking soda (will foam). Remove corn from oven, pour hot syrup over in a fine stream. Add peanuts, if desired. Stir to mix well. Return to oven for 45-50 minutes, stirring every 15 minutes. Cool and store.
